2 tablespoons of Oil

½ kilogram of Chicken breast

1 Grated carrot

1 Finely chopped bell pepper

1 Chopped onion

1 A little celery

½ teaspoon of Curry

½ teaspoon of Paprika

1 Medium sweet potato, peeled and cooked

1 Peeled and cooked potato

1 pinch of Salt

1 pinch of Pepper

1 pinch of Pepper

Preparation

Step 1 : First, place a pot of water on the stove and immerse the sweet potato, cooking until tender.

Step 2 : At the same time, do the same with the potato in another pot.

Step 3 : While the vegetables cook, start cooking the chicken in a liter of water in another pot, adding vegetables to taste, pepper, and salt.

Step 4 : Let it cook on low heat for 25 minutes.

Step 5 : Once done, remove the broth and set aside.

Step 6 : Once cooled, shred the chicken and sauté it with oil, more vegetables, cilantro, onion, and spices.

Step 7 : Next, mash the potato and sweet potato together, adding olive oil and salt, kneading until you get a homogeneous mixture.

Step 8 : Cover the dough with plastic wrap and, with a rolling pin, flatten it.

Step 9 : Then, fill the empanadas with a spoonful of the prepared chicken filling, and close them carefully, removing excess dough with a plate or 10 cm diameter glass.

Step 10 : Remove the plastic wrap and place the empanadas on a greased baking tray.

Step 11 : Once all the empanadas are ready, bake at 180°C or 350°F for 30 minutes until golden and crispy.

Step 12 : Enjoy your meal!
